Sev (Omapodi)

Ingredients:
Besan (Kadala Maavu/ Bengal Gram Flour) - 1 cup
Asafoetida - 1/4 Tsp.
Turmeric Powder - 1/4 tsp
Chilly Powder - 1/4 tsp 
Salt  - to taste
Water - as needed
Oil -  for frying


Method:

  • Mix all the ingredients Besan, salt, asafoetida, turmeric powder and chilly powder together.
  • Add enough water and knead it to make a soft(but not watery) like a chappathi dough.
  • Heat oil in a kadai to fry.
  • Fill the dough into the sev press with the small size sieve (one with the smallest holes similar to Idiyappam press).
  • When the oil is hot press out the dough into the oil.
  • Deep fry the sev till it turns crispy (till the bubbles settle down in oil).
  • Remove the sev from oil and drain it on a paper towel to remove excess oil.
  • Let it Cool down and then store in a air tight container.
  • Serve it as a snack or mix it in chat items (Bhel puri, Dhai puri etc).
