Ingredients:
Basmati Rice - 2 cups
Onion - 1 (medium chopped)
Ginger garlic paste - 1 Tsp.
Green Chillies - 6Nos.
Mixed Vegetables - 1 cup (potatoes, green beans, carrot, cauliflower, green peas)
Mint leaves - handful
Coriander leaves - handful
Curd / Yogurt - 1/4 cup
Turmeric Powder - 1/4 Tsp.
Oil/ Ghee - 4 Tsp.
Salt to taste
Water- 3 cups
Seasonings:
Fennel Seeds- 1/4 Tsp.
Cinnamon - 1"
Bay Leaf - 1
Cloves - 2 Nos.
Salt - as needed
Method:
Wash and soak the rice for about 30 mins.
Heat oil/ghee in a vessel and add the all the seasonings and then add onions saute them till it turns golden.
Add G&G paste, green chillies, mint leaves, coriander leaves and saute them for 2mins.
Add all the vegetables, curd, turmeric powder, salt and fry for 5mins.
Now add water to it and let it come to boil and then add the rice to it and close it with air tight lid.
Let it cook for 15mins in medium flame and turn off the flame.
Garnish with some chopped cilantro and roasted cashew nuts,
Serve hot with any curry or raita.
