Vegetable Biryani


Ingredients:

Basmati Rice - 2 cups
Onion - 1 (medium chopped)
Ginger garlic paste - 1 Tsp.
Green Chillies - 6Nos.
Mixed Vegetables - 1 cup (potatoes, green beans, carrot, cauliflower, green peas)
Mint leaves - handful
Coriander leaves - handful
Curd / Yogurt - 1/4 cup
Turmeric Powder - 1/4 Tsp.
Oil/ Ghee - 4 Tsp.
Salt to taste
Water- 3 cups

Seasonings:

Fennel Seeds- 1/4 Tsp.
Cinnamon - 1"
Bay Leaf - 1
Cloves - 2 Nos.
Salt - as needed

Method:




  • Wash and soak the rice for about 30 mins.

  • Heat oil/ghee in a vessel and add the all the seasonings and then add onions saute them till it turns golden.

  • Add G&G paste, green chillies, mint leaves, coriander leaves and saute them for 2mins.

  • Add all the vegetables, curd, turmeric powder, salt and fry for 5mins.

  • Now add water to it and let it come to boil and then add the rice to it and close it with air tight lid.

  • Let it cook for 15mins in medium flame and turn off the flame.

  • Garnish with some chopped cilantro and roasted cashew nuts,

  • Serve hot with any curry or raita.
