Carrot Halwa

Ingredients:

Carrots - 2 cups (Grated)
Milk - 1 cup
Sugar - 1 cup
Whole Ricotta cheese - 5 Tsp.
Ghee - 3 tblsp
Nuts & Raisins - 6 Nos. each (Almonds, Cashews)
Cardamon - 2 (powdered)

Method:

  • Wash, peel the skin and grate the carrots.
  • Use a heavy bottomed pan and cook the carrots in milk in a low flame, stir occasionally to avoid sticking to the pan.
  • After all the moisture is absorbed add ricotta cheese, sugar to the cooked carrots and stir continuously for about 10mins (medium flame).
  • In a separate pan heat ghee and fry all the nuts & raisins.
  • Now add the fried nuts, cardamom powder to it and stir for another 5mins and turn off the flame.
  • Serve either hot or cold.
* Grind the cardamom with little sugar to get a fine powder.
