Veg. Pulav

Ingredients:

Basmathi Rice - 2 Cups
Onions - 1 Nos. (medium size cut lengthwise)
Ginger & Garlic paste - 1 1/2 Tsp.
Carrot, Beans, Peas, Cauliflour - 1 Cup
Green chillies - 4 Nos. (cut lengthwise)
Mint leaves - 1 handful
Coriander leaves - 1 handful (chopped)
Butter - 1Tsp.
Cashew nuts - 5-6 broken (for garnishing)
Oil
Salt to taste
Water - 3 Cups

Seasonings:

Cinnamon - 1 inch
Cardamom - 2 Nos.
Cloves -4 Nos.
Bay leaf -1

Method:

  • Wash & soak the rice for half an hour.
  • Heat oil and butter in a vessel and then add all the seasonings, then fry the onions until golden.
  • Add G&G paste, green chilly, mint leaves, coriander leaves saute for few mins.
  • Now add all the vegetables, salt and saute for 3 mins.
  • Add water let it come to boil and then add the soaked rice and close the lid and cook on medium flame for about 15mins.
  • Heat 2 Tsp. of butter in separate pan and fry the cashews.
  • Garnish with cashews and chopped coriander leaves and serve hot with raita or any curry.
