Chennai Chicken Biryani


Ingredients:

Basmathi Rice - 2 cups
Chicken - 1lb
Onions - 2 Nos
Tomatoes -2 Nos
Ginger & Garlic paste - 3 Tsp.
Green chillies - 6 No.s
Mint Leaves - 2 handsfull
Corinder Leaves - 2 handsfull
Red chilly powder - 1 Tsp.
Turmeric powder - 1/4 Tsp.
Curd - 1/2 cup
Water - 3 cups
Ghee, oil
Salt

Seasonings:
Cinnamon sticks - 2
Cardamom -2
Cloves - 4
Bay leaves - 2
Star Anise - 2
Mace - 2

Method:
  • Soak the rice for half an hour.
  • Marinate the chicken with curd, ginger garlic paste and salt for about 20 mins.
  • Heat oil and little ghee in a vessel and then add all the seasonings, then fry the onions till golden.
  • Now add ginger & garlic paste, green chilly, mint leaves, coriander leaves saute for few mins and add tomatoes let it smash nicely.
  • Add marinated chicken ,curd, chilly powder, turmeric powder and salt. Saute for 5 mins.
  • Add 4 cups of water and let it boil then add soaked rice and cover with air tight lid and cook for 15 mins in medium flame.
  • If needed mix food colour in water and sprinkle on top of it.
  • Remove from flame and let it cool for 10 mins then mix it with other side of the spatula so that rice doesn't break.
